Guisado has been called the Mexican version of a one-pot meal. Slow-cooked stew makes its way into tortillas for the final volume of the Taco Chronicles, and Eddie Balbuena is pulling out all the stops with many versions of Guisado. Chicharron guisado, pork chile verde with salsa negra, and chicken tinga will delight our meat lovers, and for the veggie fans we’ll have a huevo guisado of eggs, salsa, and queso fresco (Eddie’s version of huevos rancheros!) and a luscious cactus salad with tomatoes, onion, and garlic.
